Servings: 2 servings 4 large eggs 2 Tbsp milk, any kind 1/8 tsp fine sea salt 1 Tbsp unsalted butter 2 tsp chives, finely chopped for garnish, optional freshly ground black pepper, to serve, optional

In a medium mixing bowl, add eggs, milk, and salt, and beat together with a fork until eggs are very well blended.

Instructions

Place a large non-stick skillet over medium/low heat. Melt in butter. Once butter is foaming, add well-beaten eggs.

Let eggs sit for a moment until you see them starting to cook at the edges and bottom.

Use a silicone spatula to pull the cooked eggs toward the middle, letting the liquid eggs take the place of the cooked eggs and working around the skillet as you go.
